I love to create healthier versions of recipes and treats. Having children, I want them to enjoy delicious foods but with ingredients that are nourishing to the body without compromising the taste. I had heard that using shredded zucchini in baking was amazing for creating chewy treats so I played around with this recipe to make it healthy, delicious and simple. Trust me on this one, only 8 simple ingredients and It’s GOOD!
Ingredients:
- 2 cups organic almond flour
- 1 cup organic cacao powder
- 1 cup organic maple syrup
- 1/2 cup organic liquified coconut oil
- 1.5 tsp baking Soda
- 1 tsp ground Himalayan salt
- 2 tsp vanilla extract
- 2 large shredded zucchini (approx. 2 cups)
Steps:
- Mix dry ingredients in a large bowl
- Mix wet ingredients in a different bowl
- Blend wet and dry ingredients using a high speed blender
- Stir Shredded zucchini into the mix using blender on lower speed
- Grease a pan using coconut oil so brownies won’t stick after baking
- Add mixture into pan using spatula
- Preheat oven to 350*
- Bake brownies for 25-30 minutes
- Let them cool and enjoy!
