Soups are a staple in our household. As soon as the cold weather hits in Fall, we start adding these delicous and nutrient dense meals into out meal rotation. Soups can even make the pickiest eater love their vegetables. Our kids love to eat soup and this is how we get a lot of nutrients into them at once. This vegan roasted red pepper soup recipe is one of our favorites. This is the first soup that my kids ever had and started their love of soups. I have been making it for years and crave it myself. If you’re looking for a delicious soup recipe to feed your family, this is it! It’s especially delicious served with a warm gooey grilled cheese sandwich. All you need are a few simple ingredients that I’ve listed below, a blender and soup pot. A very simple recipe that anyone could make!
This recipe is very simple and requires very little culinary skills to make. Once you’ve gathered all of your ingredients and kitchen tools, this recipe will take very little time to prepare and make. Here’s my simple vegan roasted red pepper soup recipe below!
Ingredients
- 4 large red peppers sliced into long pieces
- 1 can of whole tomatoes
- 1 large sweet onion chopped
- 2-3 cloves of garlic peeled and minced
- 1 box of vegetable broth
- 3 Tbsp. of avocado or olive oil
- salt and pepper
- 3 Bay leaves
Instructions
- Place cut up red peppers on a baking dish and set your oven to roast. Roast these pepper for 15-20 minutes at 375* or until slightly blackened. Set aside.
- In a big soup pot, add your oil and set stove top to medium heat.
- Add garlic and sweet onion to pot and allow to cook.
- Add vegetable broth and bay leaves, let simmer for 5-10 minutes.
- Add can of whole tomatoes.
- Add Roasted Red peppers, salt and pepper to taste.
- Allow this mixture to simmer for 15 minutes.
- Take Bay leaves out and blend the mixture until smooth with an immersion blender.
- Taste and enjoy!
